Ingredients:

  • ½ of 1        English Cucumber
  • 1 Tbsp.      salt, or more to taste
  • 2 cups       full fat yogurt
  • 3 Tbsp.     dill, chopped
  • 2 Tbsp.     mint, chiffonade
  • 1 Tbsp.      fresh lemon juice, or more to taste
  • 2 cloves    garlic, mashed into a paste
  • 1 small      shallot, minced
  • ¼ tsp.        black pepper, or more to taste
  • 2 Tbsp.      olive oil
  • ¼ tsp.        paprika, or other dried sweet pepper, for garnish

Make it:

  1. Grate the cucumber on the largest holes of your grater. 
  2. Put the cucumber into a strainer and add the salt, toss together and let it drain for 10-20 minutes. Squeeze out the excess water and put it in a medium size bowl.
  3. Add the yogurt and mix together. Add the dill, mint, lemon juice, garlic, shallot, salt and pepper. Mix well. Taste for salt and lemon, add as needed.
  4. Put this into a serving bowl, drizzle with the olive oil and sprinkle with the paprika.
