Ingredients:
- ½ of 1 English Cucumber
- 1 Tbsp. salt, or more to taste
- 2 cups full fat yogurt
- 3 Tbsp. dill, chopped
- 2 Tbsp. mint, chiffonade
- 1 Tbsp. fresh lemon juice, or more to taste
- 2 cloves garlic, mashed into a paste
- 1 small shallot, minced
- ¼ tsp. black pepper, or more to taste
- 2 Tbsp. olive oil
- ¼ tsp. paprika, or other dried sweet pepper, for garnish
Make it:
- Grate the cucumber on the largest holes of your grater.
- Put the cucumber into a strainer and add the salt, toss together and let it drain for 10-20 minutes. Squeeze out the excess water and put it in a medium size bowl.
- Add the yogurt and mix together. Add the dill, mint, lemon juice, garlic, shallot, salt and pepper. Mix well. Taste for salt and lemon, add as needed.
- Put this into a serving bowl, drizzle with the olive oil and sprinkle with the paprika.
