Falafel using fava beans

Ingredients:

  • 1 lb. dried fava beans
  • ½ tsp. baking soda
  • 2 small onion, minced
  • ½ tsp. hot red pepper flakes
  • 1 tsp. cumin seed, ground
  • Tbsp. parsley, chopped
  • 1 whole lemon, juiced
  • 1-2 Tbsp. salt, to taste (when you fry something it always needs more salt) 

Make it:

  1. Soak the dried fava beans for 24-48 hours
  2. Drain in a colander and then put in a food processor with all the other ingredients, except the salt. Puree until it has the consistency of a coarse paste (not smooth).
  3. Let it rest for 30 minutes, add the salt and form the mixture into small, golf ball-size rounds.
  4. Heat canola or vegetable oil to 350 degrees (hot but not smoking) and fry the falafel for 5 minutes or until nicely brown and cooked through. 
  5. Drain on paper towels and serve right away.
