Falafel using fava beans
Ingredients:
- 1 lb. dried fava beans
- ½ tsp. baking soda
- 2 small onion, minced
- ½ tsp. hot red pepper flakes
- 1 tsp. cumin seed, ground
- Tbsp. parsley, chopped
- 1 whole lemon, juiced
- 1-2 Tbsp. salt, to taste (when you fry something it always needs more salt)
Make it:
- Soak the dried fava beans for 24-48 hours
- Drain in a colander and then put in a food processor with all the other ingredients, except the salt. Puree until it has the consistency of a coarse paste (not smooth).
- Let it rest for 30 minutes, add the salt and form the mixture into small, golf ball-size rounds.
- Heat canola or vegetable oil to 350 degrees (hot but not smoking) and fry the falafel for 5 minutes or until nicely brown and cooked through.
- Drain on paper towels and serve right away.
