Berry Sorbet
Ingredients:
- 2 cups water
- 1 ½ cups sugar
- 1 tsp. vanilla extract
- 1 ¼ lb. or 5 cups raspberries, blueberries, blackberries, or marionberries fresh or frozen
- 2 Tbsp. lemon juice, fresh squeezed
Make it:
- In a 2-quart saucepan, add the water and the sugar and bring to a boil, stirring to dissolve the sugar. Turn the heat to low and simmer, without stirring, for 5 minutes. Turn off the heat.
- Carefully pour the syrup into a medium bowl, stir in the vanilla extract, and put this into the freezer to chill for 15 minutes.
- Put the berries of your choice in a food processor and puree (blend) until smooth. Add the syrup and blend to mix them well. Scrape the puree through a sieve, to remove the seeds.
- Stir in the lemon juice and pour this all into a shallow (2-4 inch deep) metal pan. Put in the freezer and stir every 15-minutes for 1-2 hours. This will help it get a bit lighter once frozen.
- You can also continue stirring and freezing for as long as you wish (going from 15 to 30 minute increments).
- Continue to freeze until completely firm.
