Ingredients
- 3 cups beets, boiled or roasted until tender and peeled
- 1/3 cup tahini (sesame paste)
- 1/4 cup fresh lemon juice
- 2 large garlic cloves – mashed
- 1/4 cup olive oil
- 1 tsp. ground cumin
- 1/4 tsp. cayenne pepper or paprika
- 1 tsp. salt
- Optional: 1/4 cup minced parsley or mint
Make it:
- Mash or puree the cooked beets.
- Add the tahini, lemon juice, mashed garlic, and olive oil. Puree until smooth.
- Stir in seasonings. Add the reserved cooking liquid 1 Tbsp. at a time while pureeing. Add enough of the liquid to make a thick dipping sauce.
- Taste and adjust seasonings to your preference.
