Ingredients

  • 3 cups beets, boiled or roasted until tender and peeled
  • 1/3 cup tahini (sesame paste)
  • 1/4 cup fresh lemon juice
  • 2 large garlic cloves – mashed
  • 1/4 cup olive oil
  • 1 tsp. ground cumin
  • 1/4 tsp. cayenne pepper or paprika
  • 1 tsp. salt
  • Optional: 1/4 cup minced parsley or mint

Make it:

  1. Mash or puree the cooked beets.
  2. Add the tahini, lemon juice, mashed garlic, and olive oil. Puree until smooth.
  3. Stir in seasonings. Add the reserved cooking liquid 1 Tbsp. at a time while pureeing. Add enough of the liquid to make a thick dipping sauce.
  4. Taste and adjust seasonings to your preference.
