Nasturtium Pesto

Makes: about 2 cups


  • 4 cups nasturtium leaves, washed and ripped
  • 2 cups nasturtium flowers, washed
  • 1.5 cup olive oil
  • 5 cloves garlic, roughly chopped
  • 2 tsp + salt
  • 1.5 cup walnuts, crushed
  • 1.5 cup parmesan, shredded or grated

Make It

  1. Wash, dry and rip nasturtium leaves into 1 inch pieces
  2. Add to a mortar and pestle the following ingredients (if you use a food processor for this, you can add all the ingredients at 1-time in the order you see them above): garlic, walnuts, salt, ¾ cup of olive oil, leaves, flowers, and parmesan. You can make this pesto vegan by adding more walnuts and leaving the parmesan out. Smash and grind them until they start to break down.
  3. Slowly add the rest of the olive oil and you grind the pesto until all the ingredients are thoroughly smashed and well-blended.
  4. Taste for salt and check the consistency to add any walnuts or parmesan desired.
