Black Bean and Veggie Burgers

Makes: 6 large patties

Preheat oven to 450

Ingredients

  • 2 Tbsp olive oil

  • 3/4 cup onion, minced

  • 3/4 cup carrots, minced

  • 3/4 cup bell peppers, minced

  • 3/4 cup cremini mushrooms, minced

  • 6 cloves garlic, minced

  • 3/4 cup panko bread crumbs

  • 1/3 cup ketchup
  • 2 Tbsp Dijon mustard
  • 2 Tbsp ground cumin
  • 2 Tbsp ground chili powder
  • 1 tsp salt
  • 2 1/4 cooked black beans

Make It

  1. Heat olive oil in a small pan over medium heat. Add onions, carrots, and peppers, and saute for 4-5 minutes until softened. Stir in the garlic.
  2. Add the ketchup, mustard, cumin, chili powder, and salt. Stir to combine.
  3. Remove the vegetables from the heat and set aside. In a large bowl, mash HALF of the black beans with a fork, or with your hands.
  4. Add the other half of the intact black beans, along with the panko and the vegetable mixture. Stir to combine.
  5. Line a baking sheet with foil and coat with nonstick cooking spray. Use your hands to form the mixture into 6 large patties, and place them on the baking sheet.
  6. Bake for 15 minutes in the oven. Use a spatula to serve the burgers on buns. Garnish with your favorite burger toppings! Try: Fresh basil, lettuce, red onion, or cilantro.
